His strike proved crucial as while Forest lost the second-leg of their Europa League playoff 2-1, they won the tie 4-2 on aggregate.
Hudson-Odoi said afterwards: "We made it difficult for ourselves sometimes. We showed a great reaction after they scored the second goal. You could tell we wanted to get the goal, which we did.
"We needed to up the levels a bit and focus on what we know best, which is us playing football and going to win the ball with a high press. We were unfortunate to concede early in the second half but we reacted very well."
On his goal, he added: "I looked at it and just thought I had to get a shot off, hopefully getting it on target. I'm happy with that – it's just unfortunate we couldn't get the result."
Meanwhile, Forest fullback Neco Williams also said: "We knew it was going to be a tough game, they were going to come at us quickly and we had to be ready for that. They got their goal early and it changed the momentum a bit... we are through.
"Now we want to go all the way and win this tournament. That's been the mentality and the plan from the start. We just have to stay focused on each game and try to go as high as we can."
